Ingredients
- 3 ancho chilis (approx 22g; 13g deseeded)
- 3 guajillo chilis (or cascabel, approx 21g; 13g deseeded; 2T flakes)
- 3 arbol chilis (approx 1.5g; 1.0g deseeded; use "whole dried")
- 2 T whole cumin seeds
- 2 T garlic powder
- 1 T dried oregano
- 1 t smoked paprika
Method
Remove the stems and seeds of any whole chilis you have. Toast them together with the cumin seeds in a skillet. Set aside to cool completely.
Place all ingredients in a food processor or blender, and process to a fine powder.
Store in an airtight container up to 6 months.

SJ Note 24 Sept 2016: This is a work in progress. I can't buy the American blended chili powder here, so I'm going to try blending my own with what I can get hold of. This is a first stab. I'll note the weights so I can use whole, crushed, or ground, as available.
SJ Note 20 Jan 2018: This was okay, but chunkier and more difficult to make than I prefer for my spice blends. Will try another sort.
