Granola Bars 1
Ingredients
- 105 g maple syrup
- 73 g light brown sugar
- 4 t vanilla extract
- 1/2 t salt
- 1/2 c vegetable oil
- 450 g rolled oats (5 cups)
- 280 g nuts (coarsely chopped)
- 2 c chopped dried fruit
Method
1. Adjust oven rack to upper-middle position and heat oven to 325F. Line a rimmed baking sheet with parchment paper.
2. Mix maple syrup, brown sugar, vanilla, and salt together in a large bowl. Mix in oil. Fold in oats, nuts, and dried fruit until thoroughly coated.
3. Transfer oat mixture to prepared baking sheet and spread across sheet into a thin, even layer. Compress mixture until very compact.
4. Bake until lightly browned, 40 to 45 minutes, rotating pan once halfway through baking.
5. Remove granola from oven and cool on wire rack to room temperature, about 1 hour.
6. Cut into bars of desired size.
Granola can be stored in an airtight container for up to 2 weeks.
Notes
SJ Note 8 Jan 2017: Far too dry & crumbly, and I don't particularly like the flavor. Doesn't work as bars at all; this makes muesli/cereal that needs milk.
