Granola Bars 3
Ingredients
- 4 c rolled oats
- 1/2 c sunflower seeds
- 1/2 c coconut
- 1/2 c flax seed meal
- 1/2 c oat bran
- 1/2 c dried fruit
- 1/2 c chopped nuts
- 57 g butter
- 1/2 c light corn syrup
- 15 g plain flour (2T)
- 165 g brown sugar
- 1/2 t ground cinnamon
- 83 g honey (1/4 cup)
Method
In a large mixing bowl, combine the oats, sunflower kernels, coconut, flax seed meal, oat bran, dried fruit, and nuts.
In a small saucepan, melt the butter over medium-low heat. Add corn syrup, flour, brown sugar, cinnamon, and honey; stir to combine. Increase heat to medium and stir occassionally.
Meanwhile, spray a 9"x13" baking pan with non-stick spray. Measure out a sheet of foil large enough to cover pan. Spray foil with non-stick spray and set aside.
Cook the corn syrup mixture until it comes to a full boil; let boil for one minute. Remove from heat and pour over oat mixture. Stir to combine (mixture will be very stiff).
Transfer mixture into prepared pan. Cover with prepared foil and PRESS FIRMLY. You want the mixture to be as compact as possible. You might use a small cutting board to help press the mixture firmly & evenly (don't be afraid to stand on it!).
When the mixture is as firm and even as you would like, remove the foil & let mixture cool.
Cut into bars.
Notes
Note from source: With so many ways to vary this recipe, I've never made them the same way twice.
Don't be afraid to add, remove, and/or substitute ingredients, such as chocolate chips, wheat germ, raisins, anything goes.
