Chicken Caesar Salad Wraps
- 50 g mayonnaise (1/4 cup)
- 18 g grated parmesan cheese (1/4 cup)
- 2 T lemon juice
- 1 T Worcestershire sauce
- 1 T Dijon mustard
- 1 t minced garlic
- 15 mL rapeseed oil
- 150 g cooked chicken (shredded or chopped)
- 150 g romaine lettuce heart (cut into bite sized pieces)
- 4 flour tortillas (10")
Make the dressing:
Whisk mayonnaise, Parmesan, lemon juice, Worcestershire, mustard, and garlic together until combined. Whisk in oil slowly until thoroughly incorporated.
Make the wraps:
Toss chicken and lettuce with half the dressing; add more if desired.
Lay tortillas out. Divide chicken and lettuce mixture and roll into wraps.
22 Jul 2017: Good! Tasty. Too much - have reduced. Used a fork to whisk dressing in our glass 2-cup measuring cup; it worked a treat, we got homogenized dressing, about 200mL. Definitely will have again. Once I work out the amount of lettuce to use, toss the shredded chicken and lettuce together to avoid large clumps of chicken in the wraps.
