Ingredients

  • Egg Mixture:
  • 12 eggs
  • 1/2 c single cream
  • 1 t salt
  • 1/2 t freshly ground pepper
  • The rest:
  • 2 T olive oil
  • 4 oz white sandwich bread (cut into 1" squares)
  • 2 T butter
  • 200 g gammon (cubed)
  • 4 thinly sliced green onions (white and green parts separated)
  • 4 t minced garlic
  • 3 oz shredded gruyere cheese

Method

1. Adjust oven rack to upper-middle position and heat oven to 450 F.

2. Whisk eggs, cream, salt, and pepper in bowl until well combined, about 30 seconds; set aside.

3. Heat oil in 12" ovensafe nonstick skillet over medium heat until shimmering. Add bread and cook until lightly browned, about 5 minutes.

4. Push bread to sides of pan and melt butter in center. Add gammon, green onion whites, and garlic to butter and cook until fragrant, about 30 seconds; stir into bread to combine.

5. Add egg mixture and cook, scraping bottom of skillet with rubber spatula, until large curds form, about 2 minutes. Continue to cook, without stirring, for 30 seconds.

6. Once the eggs are set, sprinkle Gruyère over top. Transfer skillet to oven and bake until surface of strata is slightly puffy and cheese is melted, 5 to 7 minutes.

7. Remove skillet from oven and let stand for 10 minutes. Using spatula, loosen strata from skillet and slide onto platter or cutting board. Sprinkle with green onion greens. Cut into wedges and serve.

Notes

SJ Note 24 July 2017: Edible, but not tasty. Not worth having again. The browning the bread really doesn't work that way: if you try it anyway, just toast the bread and then cube it and don't try it in the skillet. Also, it really needs a skillet to cook right, even if you're afraid yours isn't large enough. It didn't really cook right in a pot. I think there's too many green onions; I'd drop it to 3. But it needs more flavor.
