- 8 oz Flour - plain
- 1/2 t salt
- 1 T Mixed spice
- 1 T ground cinnamon
- 1 T ground ginger
- 1 T baking soda
- 8 oz oats
- 6 oz black treacle
- 5 oz butter
- 4 oz brown sugar
- 1/4 pint milk
- 1 egg (lightly beaten)
Grease and line with parchment a 7" square baking dish or large loaf pan. Preheat oven to 180C.
Sift flour, salt, spices, and baking soda in a bowl.
Add the oats and mix well. Set aside.
In a pot, mix the treacle, milk, butter, and brown sugar. Stir over a low heat until the butter melts and the sugar dissolves.
Create a well in the middle of the dry ingredients. Pour the liquids into the well in the dry ingredients, add the egg, and stir until combined.
Pour batter into the prepared baking dish, and bake at 180C for 60 minutes or until a skewer comes out clean.
Cool in the dish for at least 10 minutes, turn out onto wire cooling rack and allow to cool. Once cool, wrap in foil or keep in an airtight container.
