Taco Bell Mexican Pizza
Ingredients
- 1/4 lb ground beef
- 1 T Flour (Plain)
- 1/8 t chili powder, to taste
- 1/4 t salt
- 1/4 t onion powder
- 1/4 t paprika
- dash garlic powder
- 1 T water
- 2 tortillas (corn or flour, according to your preference; 4 small (about 6") or 2 large (about 9"))
- 8 oz refried beans
- 1/4 c diced tomato
- 1/4 c salsa
- 1/4 c shredded cheddar cheese
- 1/4 c shredded Monterey jack cheese
- 2 T chopped green onions
- 1/4 c chopped bell pepper
Method
In a medium bowl, combine the ground beef with the flour, chili powder, salt, dried onion, paprika, garlic powder and onion powder. Use your hands to thoroughly incorporate everything into the ground beef.
Preheat a skillet over medium heat. Add the ground beef mixture to the pan along with the water. Brown the beef mixture until done, using a wooden spoon or spatula to break up the meat as it cooks.
Heat refried beans in a small pan over the stove or in the microwave.
Preheat oven to 400F/200C/Gas 6.
Check the size of your tortillas against the size of your baking pan. If you can fit an entire tortilla on your baking sheet, then follow Directions 1; if you can't (and your oven isn't big enough to accomodate a larger pan that can), follow Directions 2. If using four smaller tortillas, divide ingredients and do what it says below twice.
Directions 1:
When meat and beans are done, stack the pizza by first spreading the refried beans on the face of one tortilla. Next spread the meat, then place the other tortilla on top. Coat your pizza with the salsa, then layer the tomatoes on top. Next layer the cheese, green onions, and bell peppers.
Place pizza in your hot oven for 8-12 minutes or until cheese on top is melted.
Directions 2:
When meat and beans are done, stack each pizza by first spreading about half of the refried beans on half the face of one tortilla. Next spread half of the meat, then fold the tortilla in half. Coat your pizzas with 2 T of salsa on each then split up the tomatoes and stack them on top. Next divide up the cheese, green onions, and bell peppers, stacking in that order.
Place pizzas in your hot oven for 8-12 minutes or until cheese on top is melted.

SJ Note 21 Jan 2011: This is a really forgiving recipe; make it with whatever you have on hand that sounds good to you, and don't worry too much about the measurements.
