- 375 g Flour (Plain)
- 400 g granulated sugar
- 1 t cinnamon
- 3/4 t table salt
- 1 t baking soda
- 2 eggs
- 2 t vanilla extract
- 1.25 c vegetable oil (10 fl oz)
- 2 grated apples
- 1 c chopped nuts (optional)
Method
Preheat oven to 300 degrees F (150C). In a large bowl, mix together all ingredients until well blended. Pour batter into 2 two-pound lined loaf pans. Bake for about 1hr 30-40min.
Can also make about 18 muffins. Bake for about 40 min.
Can also make 4 small (one-pound) loaves. Bake for about 1hr 10-20min.
Notes
SJ Note: Use two-pound loaf pans, which are about 9"x5"x3". This is a favorite recipe - always tasty, uses things we generally have on hand, and keeps really well.
