  • 1/4 c Flour (Plain)
  • 1 t thyme, dried
  • 1/2 t salt
  • 4 chicken legs
  • 1 T olive oil
  • 4 c quartered mushrooms
  • 1.5 c sliced carrot (1/4" thick)
  • 1/3 c sliced Canadian bacon (1/4" thick)
  • 2/3 c dry red wine
  • 2/3 c chicken broth
  • 1 T tomato paste
  • thyme sprigs


1. Combine flour, thyme, and salt in a ziptop plastic bag, add chicken. Seal and shake to coat. Remove chicken from bag, shaking off excess flour mixture.

2. Heat oil in a large nonstick skillet over mediumhigh heat. Add chicken, cook 8 minutes or until browned, turning frequently. Remove chicken from pan.

3. Add mushrooms, carrot, and pacon to pan, saute 2 minutes. sir in wine, chicken broth, and tomato paste, and cook 9 minutes. return chicken to pan, cook 8 minutes, or until chickenis done. garnish with thyme
