- pork belly
- sea salt
- brown sugar (optional)
Method
1. Chop or keep whole your pork belly. (Fat is important.)
2. Decide whether you want a salt/sugar mix, or just salt.
If you want a salt/sugar mix, mix 5 parts sea salt with 1 part brown sugar.
3. Cover the pork completely with salt or salt/sugar.
4. Leave in the fridge for 2-3 days or longer.
5. For larger pork bellies, drain and repeat steps 3 & 4.
6. Rinse the pork and dry it.
7. Store wrapped in the fridge or a cool area.
8. To use, soak or simmer in water before use.
Notes
Salt pork is also good in Boston baked beans, stews, and casseroles.
