- 57 g butter, softened
- 1/4 c Sugar (Granulated)
- 1/2 c Flour (Plain)
- 1/4 c oatmeal (not instant)
- 1/4 c lemon juice
- 2 T lime juice
- zest of 2 lemons
- zest of 2 limes
- zest of 1 orange
- 400 g sweetened condensed milk
Method
Cream butter and sugar, then add the flour and oatmeal to make the dough (it will be a little crumbly). Set aside. Whisk juice and zest into milk. Set aside.
Spray muffin liners with oil or Pam. Press two-thirds to three-quarters of the dough into the pan. Spread lemon/milk mixture evenly over the top of the dough. Sprinkle the remaining dough (kind of like streusel) over the top.
Bake at 350 degrees for 35 to 40 minutes until golden.
