- 1.25 c Flour (Self-Raising)
- 1/2 t ground cinnamon
- 227 g unsalted butter (softened)
- 150 g Sugar (Granulated)
- 165 g Sugar (Light Brown)
- 2 eggs
- 1 T vanilla extract
- 3 c oats
- 11 oz butterscotch chips
- grated orange zest (optional)
Preheat oven to 375. Combine flour and cinnamon in a small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla in a large bowl, gradually adding in the flour mixture. Stir in the oats and butterscotch chips. Drop dough onto a Silpat lined or prepared baking sheet.
If making larger cookies, bake 9 minutes or until cookies become just golden around the edges. Smaller cookies, 7 to 8 minutes. Cool briefly on the baking sheets before removing to a wire rack.
