Herb-Crusted Salmon
Ingredients
- 38 g bread crumbs (or about 20g panko)
- 1 T grated parmesan cheese
- 13 g butter (melted)
- salt
- pepper
- 1/2 T grated lemon zest
- 1 T dried basil
- 1 T dried dill
- 300 g salmon
Method
Preheat oven to 200C/400F/Gas 6. Mix together the breadcrumbs, parmesan cheese, butter, seasoning, lemon zest, and basil or dill.
Place the salmon fillets on a sheet of baking parchment on a baking tray. Divide the topping between the fillets, pressing it down quite well so that it stays on the salmon while cooking.
Bake in the center of the oven for 12-15 minutes until the breadcrumb topping is golden and the salmon is just cooked. Serve at once with minted new potatoes and green beans.
Notes
SJ Note 17 Oct 2009: We had this with panko (Japanese breadcrumbs: they're wide and flat, instead of the generally round shape of normal breadcrumbs). This was okay, but I don't think it's a keeper. I didn't care for the crusting idea, it didn't really flavor the salmon.
