Brown Butter Pasta 2
Ingredients
- 2 T butter (salted)
- 1/8 t grated nutmeg
- 1 pinch turmeric
- 45 g shredded gouda
- 1/4 c panko (or bread crumbs)
- 115 g fettucine
Method
Bring a large pot of lightly salted water to a boil.
While pasta cooks, over medium heat, combine butter, nutmeg, and turmeric. Heat, stirring frequently, until butter has melted and browned slightly (about 8 minutes).
Add pasta to boiling water and cook to desired doneness.
Mix grated cheese and breadcrumbs. Set aside.
Drain pasta and return to pot. Pour butter mixture over pasta and toss to coat.
Transfer to serving bowl and sprinkle breadcrumb mixture over the top.
Notes
SJ Note 25 Feb 2010: Not impressed with this one. It needed a bunch more melted butter, as the pasta was too dry, and also salt, pepper, garlic powder, and onion powder. The grated cheese and panko on top was kind of odd; if I made it again, I'd omit the panko and mix the cheese into it. But instead, we'll just stick with the other Brown Butter Pasta recipe.
