Ingredients

  • 1 t grated carrot (finely chopped)
  • 1 t minced red bell pepper
  • 1/2 t lemon zest (finely grated)
  • 3/8 t ground pepper
  • 1/8 t dried parsley flakes
  • 1 t Salt (Sea)
  • 1/4 t garlic powder
  • 1/8 t onion powder
  • 2 t sugar
  • 2 t pectin (dry)
  • 1 pinch ground oregano
  • To Make Dressing:
  • 1/4 c vinegar
  • 3 T water
  • 1/2 c oil

Method

Place the carrot and bell pepper on a baking pan in an oven set on 250F / 120C for 45-60 minutes, or until all of the small pieces are completely dry, but not browned.

Combine the dried carrot and bell pepper with the other ingredients in a small bowl.  Store mix in a sealed container indefinitely until needed.

When ready to use, pour vinegar into a jar.  Add water, then add the dressing mix.  Seal and shake vigorously.  Add oil and shake until well-blended.
