Ingredients
- 1 t grated carrot (finely chopped)
- 1 t minced red bell pepper
- 1/2 t lemon zest (finely grated)
- 3/8 t ground pepper
- 1/8 t dried parsley flakes
- 1 t Salt (Sea)
- 1/4 t garlic powder
- 1/8 t onion powder
- 2 t sugar
- 2 t pectin (dry)
- 1 pinch ground oregano
- To Make Dressing:
- 1/4 c vinegar
- 3 T water
- 1/2 c oil
Method
Place the carrot and bell pepper on a baking pan in an oven set on 250F / 120C for 45-60 minutes, or until all of the small pieces are completely dry, but not browned.
Combine the dried carrot and bell pepper with the other ingredients in a small bowl. Store mix in a sealed container indefinitely until needed.
When ready to use, pour vinegar into a jar. Add water, then add the dressing mix. Seal and shake vigorously. Add oil and shake until well-blended.
