Ingredients
- 12 shrimp (jumbo, shelled and deveined)
- 2 oz tasso (julienne into 1" strips)
- For Seasoned Flour:
- 125 g Flour (Plain) (1 cup)
- 1 t Salt (Table)
- 1/2 t ground black pepper
- 1/2 t ground red pepper
- 1 t garlic powder
- 1 t onion powder
- The Rest:
- oil (as needed)
- five pepper jelly (as needed)
- 4 oz hot sauce beurre blanc
- 12 pickled okra
Method
Make a 1/4" incision down the back of each shrimp and place one strip of tasso in each incision. Secure with a toothpick.
Mix together ingredients for seasoned flour. Lightly dust each shrimp with seasoned flour and fry.
Place cooked shrimp in a bowl with 4 oz of hot sauce buerre blanc and toss until well coated.
Spread five pepper jelly on the bottom of a small dish and arrange shrimp on the plate alternating with the pickled okra (like spokes of a wheel).
