Ingredients

  • 1 sliced carrot
  • 4 diced potatoes (1" cubes)
  • 1/2 diced onion
  • 2 T olive oil
  • 1/2 lb smoked trout (flaked)
  • 2 t minced rosemary (fresh)
  • 2 t dried oregano (or 1-2 twigs fresh)
  • 1/4 c finely chopped dill (fresh)
  • 1/4 c finely chopped parsley
  • 1 t Dijon mustard
  • 1 T cider vinegar
  • 2 T olive oil
  • Salt (Sea) (to taste)
  • freshly ground black pepper (to taste)
  • 4 eggs

Method

Pre-heat oven broiler.

Dice onion, peel & slice carrots, and dice potatoes into about 1-inch cubes. Cook carrot, onion &  potatoes in about 2 tablespoons olive oil heated in oven-proof pan for about 10 minutes. Add smoked trout (flaked), rosemary, and oregano and cook for about 10 minutes more or until potatoes are tender. Combine dill, parsley, mustard, vinegar & 2 tablespoons oil in a bowl. Stir into potato mixture. Quickly, break eggs over the potato mixture and place pan into oven for about 10 minutes, or until eggs are cooked to your liking.

Serve with toast, butter, and tea.
