Alfredo Shrimp Fish
Ingredients
- Fish:
- 2 fillets of white fish (haddock, tilapia, etc)
- 1/2 T canola oil
- 1 T Creole seasoning
- Topping:
- 1 thinly sliced pimentos (or 1/2 red pepper)
- 2 t canola oil
- 1 Alfredo sauce (1 recipe)
- 2 t canola oil
- 1 t minced garlic
- 85 g shrimp (cleaned, shelled, and deveined)
- Serving:
- grated parmesan cheese (for serving)
- Creole seasoning (for serving)
Method
1. Preheat oven to 425F/Gas 7.
2. Wash and dry fish, spread with oil and Creole seasoning, to your taste. Place in well-oiled baking pan, and bake for 8-10 minutes, until just white.
3. While fish is baking, saute slivers of pimento/red pepper in 2t oil, until cooked, about 2 minutes.
4. Warm the alfredo in a small saucepan.
5. In a frying pan, heat 2t oil, add minced garlic and shrimp; saute for about 3 minutes.
6. When fish is cooked, remove it from oven.
7. To serve: Place one fish fillet on each plate. Place half the pimento/red pepper slivers and half the shrimp on top of the fillets. Top with half the alfredo, sprinkle some grated parmesan, and dust some more Creole seasoning.

SJ Note 31 Dec 2010: This was very, very tasty - definitely a keeper! It called for too much alfredo sauce (though we solved that by putting it over the broccoli we had with it); I've reduced the amount in this copy. Great New Year's Eve meal :-)
