Chili and Lime Grilled Shrimp
Ingredients
- 1/2 lb shrimp (large)
- 1/2 t chili powder
- 1/4 t freshly ground black pepper
- 1/4 t lemon zest (or 1/2 tsp lemon pepper)
- 1 t ground mustard
- 1/2 t garlic powder
- 1/2 lime
- 1 T extra virgin olive oil
- lime wedges (to garnish)
Method
If frozen, thaw shrimp in a bowl of cold water; it should only need about ten minutes. Peel shrimp and devein. Place shrimp in a medium bowl.
Stir together chili, pepper, lemon zest, ground mustard, and garlic powder in a small bowl. Sprinkle mixture over shrimp, tossing to coat. Grate zest from half of the uncut lime, and add to shrimp mixture in bowl. Cut lime in half, and squeeze juice of one half into bowl; reserve other half for garnish. Stir in olive oil. Thread shrimp onto skewers, and place skewers on a plate. Cover and chill.
Preheat grill to medium (300F-350F). While waiting, prepare seasoned white beans. Grill shrimp skewers, covered with grill lid, 3-4 minutes on each side or just until shrimp turn pink. Take care not to overcook the shrimp as their will be some residual cook time once they are pulled from the grate. Serve and enjoy.

SJ Note 21 Jan 2012: This shrimp was really good, definitely a keeper. The white beans were quite boring, and not our preference, so I've stricken the suggestion to serve this shrimp with those beans from the recipe, but you can still follow the link above to try them yourself.
