- 1 egg white
- 50 g sugar - caster
- 75 g coconut (dessicated)
1. Preheat the oven to 140C. Line a baking tray with baking paper; set aside.
2. In a clean bowl, whisk the egg white until stiff. Fold in a spoonful of sugar, then a spoonful of coconut; repeat until all is used.
3. Put heaped teaspoonfuls of mix on baking tray and shape into pyramids.
4. Bake for 45-50 minutes until pale golden. Cool slightly on tray, then remove to a wire rack to cool completely.
