Buffalo Chicken Pizza
Ingredients
- 1 pizza base
- Cream Sauce
- 3 T butter
- 3 T flour
- 1 t garlic
- 4 oz cream cheese
- 1/2 c milk
- 1/4 t salt
- Toppings
- 2 c shredded chicken
- 1/4 c buffalo wing sauce (see Chicken Wings recipe (id: 295))
- 1 c shredded cheese (mozzarella, cheddar, etc)
- 3 sliced green onion
- other toppings as desired
Method
Combine the butter and minced garlic in a small sauce pot. Cook over medium-low heat for 1-2 minutes, or until the garlic is soft. Add the flour and stir constantly to form a light roux. Add the cream cheese, milk, and salt. Whisk and cook for a few minutes more, or until the cream cheese has melted and the sauce becomes smooth. Set the sauce aside.
Combine the shredded chicken and buffalo sauce in a bowl and toss until the chicken is well coated.
When you're ready to build the pizza, begin preheating the oven to 450 degrees. Spread the cream sauce over the surface of the pizza base. Next add the buffalo chicken, the shredded cheese, andother toppings. Once the oven has fully preheated, bake the pizza for 15-20 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.
When the pizza comes out of the oven, top it with sliced green onions and serve.
Notes
Sept 2015: Original source dough didn't turn out well at all: far too thin, and so soft it couldn't support the toppings. The fallout of this involved a lot of fire alarm tests, and Chris cleaning the oven. The sauce was not thick enough, so a roux step has been added - overall it was worth trying again, with a more sturdy base, and foil on the base of the oven.
