Ingredients

  • 1/2 c fresh parsley leaves
  • 4 scallions/green onions
  • 1/4 c extra virgin olive oil
  • 2 T water
  • 2 t red wine vinegar
  • 1/2 T Dijon mustard
  • 1/4 t salt
  • 1/4 t freshly ground black pepper

Method

Process all ingredients in a blender until smooth, about 1 minute.

Toss with cooked vegetables; pour over cooked meat, as desired.
